Last night, we had the opportunity to attend the VIP preview of Dean’s Steak & Seafood, the newest addition to the JW Marriott Indianapolis — and it’s safe to say this restaurant redefines what fine dining feels like downtown. From the moment we stepped inside, the space radiated elegance without excess — warm lighting, soft jazz, and attentive service set the tone for an evening that was both elevated and welcoming.

First Impressions & Atmosphere

Dean’s immediately captures your attention with its refined interior — deep leather seating, polished marble, and an open kitchen that showcases the rhythm of a world-class culinary team. The hospitality matched the setting perfectly: polished but personable, with servers who anticipated every need while keeping the atmosphere relaxed and intimate.

A Flavorful Start: Starters That Set the Bar

We began with the Truffle Honey Burrata, a dish that balanced richness and freshness beautifully. The creamy burrata paired with apricot agrodolce and marcona almonds was layered in flavor, especially when spread over the rustic grilled bread.

Next came two salads: the Little Gem Caesar, a fresh and balanced take with roasted garlic dressing and a subtle anchovy note, and the Steakhouse Wedge, hearty and indulgent with thick-cut bacon, pickled onions, and creamy gorgonzola. Both were classic yet refined — familiar favorites elevated by execution.

The Main Event: Premium Cuts Done Right

For the main course, we sampled two standout cuts. The Japanese A5 Wagyu Striploin from Miyazaki was the evening’s showstopper — intensely marbled, buttery in texture, and rich with umami. Cooked to perfection, each bite reminded us why this cut has such a legendary reputation.

Alongside it, the Fred Linz Heritage Barrel Cut Filet delivered a more traditional steakhouse experience — tender, deeply flavorful, and perfectly seared. Both cuts reflected exceptional sourcing and technique, honoring the craft of steak preparation at the highest level.

Sides & Sips: Thoughtful Pairings

No steakhouse experience is complete without indulgent sides, and the Billionaire’s Potato lived up to its name. Twice-baked with parmesan, fontina, and shaved truffle, it’s comfort food at its most extravagant.

To pair, we explored Dean’s cocktail program — starting with an Old Fashioned crafted with Wild Turkey Rye 101, pumpkin-spiced brown sugar, and walnut bitters. Seasonal, smooth, and balanced. The Negroni, featuring Bombay Sapphire and Dolin Rouge, was classic yet perfectly measured, matching the steak’s richness beautifully.
