There are brunch spots that are simply nice — and then there are places like Eggshell Bistro, where the experience feels like stepping into a storybook. Located in the heart of Carmel City Center, Eggshell Bistro is a true hidden gem that blends exquisite flavors, thoughtful design, and warm hospitality into something unforgettable.
From the moment we walked in, we were welcomed with a smile from Sam, who not only made us feel at home but also shared her personal recommendations. The atmosphere was calm, cozy, and almost magical — the kind of place where time slows down, and every detail invites you to savor the moment.
One of the most striking things about Eggshell Bistro is its interior design, carefully curated by Chef and Owner Larry Hanes. Larry, a designer and innovator by training, has created a space that reflects European charm and industrial chic sophistication.
The walls are adorned with original artwork, vintage artifacts, and elegant touches that make the space feel both intimate and inspiring. Natural light pours through the glass-encased breezeway, giving guests the perfect spot to enjoy their coffee while people-watching or just soaking in the calm.
Eggshell Bistro isn’t just about brunch; it’s a culinary and aesthetic experience.
When Sam recommended their signature dish, the Shakshuka, I knew I had to try it. And it did not disappoint.
This dish features a Moroccan-spiced tomato base, onions, sous-vide hen’s egg, chèvre, zhoug, and rose petal za’atar, served with perfectly grilled ciabatta. Every bite was layered with flavor — warm spices, creamy eggs, a tangy kick from the chèvre, and that delicate floral hint from the za’atar. It’s a dish that’s both comforting and elevated, and at $19, it’s worth every penny.
To complement the meal, I ordered a cappuccino, made with award-winning Four Barrel Coffee. Smooth, rich, and beautifully presented — it was the perfect match to a perfect brunch.
Eggshell Bistro is more than just another brunch spot. Chef Hanes and his team have received regional and national recognition for their culinary craft.
Their coffee program is one of the best in the Midwest, with a unique partnership with Four Barrel Coffee, consistently ranked among the top roasters in the U.S.
Their menu reflects what Chef Hanes calls “twistorical cuisine” — creative interpretations of global classics with a modern touch. Every plate tells a story inspired by travel, research, and culture.
What makes Eggshell Bistro stand out isn’t just its flavorful menu or its beautiful decor — it’s the entire experience. It’s the kind of place where you can have a quiet conversation, enjoy slow sips of coffee, and taste dishes crafted with intention.
I didn’t record much during my visit because I didn’t want to disturb other guests — the vibe was peaceful and personal. But trust me: this is a place you need to experience for yourself.
